Mine weren't as big as yours. That picture must be the filling for three burritos wrapped in one burrito. Anyway, it was good even though the low carb burritos aren't as good as the regular ones. At least it kept me on my diet and tasted good overall. I'd make them again.

Be sure to use low carb tortillas! If you don't it will mess up your diet.

Indeed these are great especially if you're a big fan of mexican food. We actually used whole wheat sandwich pockets and stuffed them with the egg mixture, good stuff!

Hey, bbpickens - guess what? Lots of people in the world don't let kids rule what they cook and eat. So go buy some boxes of Lucky Charms and some chocolate milk, and lay off commenting on recipes that just might happen to have ucky vegetables in them.

Hi "bbpickens" - Thanks for posting. I'm sorry to hear your many children don't like onions. Maybe you missed it, but here's 1,630 other breakfast recipes you might try. Sorry if a few of them have vegetables.

Kids don't want to eat food with onions in them. Think of kids too. There are way more kids living in this house then parents and I don't cook for my health. I cook for my kids to not only eat, but enjoy there meal. They don't want to eat chiles and tomatoes for breakfast. So please would you make some kid breakfasts that they will enjoy. Thank you for trying to help.

You can put them on a cookie sheet, put in the freezer then transfer them to freezer bags. I read this on another site.

I love this breakfast burrito recipe! The green chiles are a great addition. Do you think it would work to make these for the week, freeze them and then pull them out daily when I want to eat them? Just a thought.
