I added water as needed, plus 1 Tablespoon of sugar. They came out just fine.

Just a guess, but the recipe seems incomplete. It contains no eggs, and 1 cup buttermilk w/ only 1/2 cup pumpkin puree doesn't look like enough liquid. Not an expert, but my guess is the recipe isn't showing all the necessary ingredients. I will try adding some eggs and see if that fixes the recipe.

We just tried this recipe for breakfast and before starting my wife was not sure about the amount of liquid (buttermilk) vs. the amount of flour. To make even the least bit usable we had to alter the amount of buttermilk to even mix it for use. Also, don't most pancakes have an egg in them. They were not very edible and were sent to the compost bin.
