Breakfast Bruschetta a` la Paul

- 2 Grosse Lisse Tomatoes

2 slices Italian sour dough bread

extra-virgin olive oil

balsamic vinegar

fresh ground salt & pepper

Additional options:

capers
-
gherkins
-
crisped streaky bacon (recommended)
Toast thick slices of bread. Remove tomato core & chop up into approx. half-inch cubes. Pile on hot toast generously.
Drizzle oil & vinegar over tomato. Grind salt & pepper over. Add to taste capers, chopped gherkins, chopped bacon or a combination.
Eat while warm... BON APPETIT !
For any meal, but best for early breakfast.
