Fruit And Rice Cereal
(2 servings)
- 1 cup quick-cooking brown rice

2/4 cup lowfat milk (soy milk works)

1/3 cup mixed dried fruit bits (raisins work okay)

3 Tablespoons brown sugar

1/8 teaspoon salt

a dash of ground nutmeg
In a large saucepan bring about 1 and 1/2 cups of water and the salt to the boiling point. Add rice and dried fruit.
Cover and simmer 12 to 14 minutes or until the rice is tender and liquid is nearly all absorbed. Stir in milk and nutmeg.
Serve with brown sugar.
