Vegetarian Breakfast Crepes
(4 servings)
- 1 and 1/4 cups soy milk (plain or vanilla)
-
1 cup all-purpose flour
-
1/2 cup Egg Beaters or other egg substitute
-
1/3 cup apple sauce
-
1 Tablespoons sugar
-
dash salt
This recipe makes about a dozen crepes.
In a large bowl, whisk together the egg substitute, milk and apple sauce. Add flour sugar and salt and continue to whisk vigorously for at least 2 minutes. (You could cheat and use a blender.)
Heat a frying pan to medium. Give it a very light spray of cooking oil. Drop the crepe mixture onto the heated surface. Using about a 1/4 cup of batter for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. The thinner the crepe -- the better the crepe.
Cook each side until the golden brown brown (about 2 minutes for side one -- batter will bubble; and 1 minute for side 2). Gently remove and place on a plate. Place waxed paper between cooked crepes to prevent sticking.
You can add your favorite sweet or fruity filling or just serve with lemon juice and powdered sugar like they do in Europe. I'm a fan a strawberry jam myself.
