Nut n' Oat Waffle

- 2 cups quick cooking or rolled Old Fashioned oats

3/4 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/4 cup pecans

1 and 1/2 cups milk or water

2 large eggs - beaten

1 teaspoon vanilla

1/4 cup butter - melted

3 Tablespoons sugar or other sweetener
In a food processor (or a good blender will work), pulse and grind the oats down to a flour. Add the all-purpose flour, baking powder, salt and pecans and pulse again until well mixed and the pecans are a bit smaller.
In a large bowl, whisk together the milk, beaten eggs, vanilla, melted butter and sugar.
Add the dry ingredients and stir until just mixed and moistened.
The batter should be the consistency of a very-thick syrup. If too thick, stir in more milk a Tablespoon at a time. If too thin, add more all-purpose flour a Tablespoon at a time.
Cook according to your waffle maker's instructions.
Make 6 to 8 waffles.
* For more of an oat-like texture, stir an additional 1/4 cup of un-ground quick-cooking oats into the batter just before making the waffles.
If you use honey for your sweetener, reduce the amount to 2 Tablespoons as it tends to be more sweet.
The base of these waffles are oats that you grind down to a flour. For the sweetener, you can use your choice of sugar, brown sugar, maple syrup or honey.
