Labor Day BBQ Eggs
(2 servings)
- 4 large eggs
-
1/2 cup shredded Cheddar cheese
-
2 and 1/2 Tablespoons of your favorite BBQ sauce
-
1 and 1/2 Tablespoons milk
-
1 Tablespoon butter (for frying)
-
1 teaspoon dried dill
-
1 teaspoon mustard powder
-
1 teaspoon minced garlic
Whisk eggs briskly in a large bowl. Add all ingredients except for cheese and butter. Continue to whisk until well blended.
Melt butter or margarine in a large skillet over medium heat. Pour in egg mixture and cook - stirring frequently until eggs are scrambled and cooked through. Remove from heat, and sprinkle cheese over the top. Let stand for a minute to melt cheese, then serve immediately.
Note From Recipe Submitter:
We make this every Labor Day weekend because we always have BBQ sauce around for grilling in the afternoon. We tend to use Sweet Ray's BBQ sauce (my favorite), but any BBQ sauce should work. Adjust spices to the taste of your BBQ sauce. The added spices aren't absolutely necessary, but they definitely add a fresh kick.
The reference to 'Labor Day' in this recipe's name is because of the use of BBQ sauce, a Labor Day staple. But you can make this any day of the year.
