Apple Citrus Compote

(4 servings)

  • 2 cups Granny Smith or Stayman apples - peeled and sliced
  • 1 and 1/2 cups pitted prunes (about 9 ounces)
  • 1 and 1/2 cups orange juice
  • 2 Tablespoons honey
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 2 pink grapefruit - peeled and cut into segments
  • 2 navel oranges - peeled and cut into segments
  • mint sprigs for garnish
In 2 to 3 quart saucepan, combine apples, prunes and orange juice; bring to a boil, reduce heat and simmer until the apples are tender but not soft (about 10 minutes). Remove from heat; stir in honey, juice and cinnamon.

Cool, cover and chill (I chill overnight at least 4 to 6 hours). Remove from refrigerator and stir in oranges and grapefruit.

To serve, spoon into serving dishes and garnish with mint sprigs.

Try experimenting with cornstarch and to thicken the fruit juices into a syrup. I haven't had the best results with that, but in theory it should work, right?


A real freash and healthy breakfast treat. I had something just like this on a cruise ship for breakfast once. It's awesome.
