Kiwifruit French Toast

(2 servings)

  • 1 egg
  • 1/4 cup milk
  • 1/4 teaspoon vanilla
  • Dash salt
  • 2 kiwifruit -- peeled and sliced 1/4 inch thick
  • 4 slices cinnamon raisin bread
  • Powdered sugar
  • Maple syrup
In pie plate or shallow bowl, mix egg, milk, vanilla and salt until well blended. Place kiwifruit slices in a single layer between 2 pieces of bread. Place sandwich in egg mixture, turning once to coat both sides. Repeat with remaining kiwifruit and bread to form second sandwich.

Heat griddle or non-stick pan over medium heat. Spray with non-stick cooking spray. Cook sandwiches, turning once, until golden brown on the outside and there is no evidence of uncooked eggs, about 3 minutes.
I link to press down on the sandwich with my spatula at the 2 and 1/2 minute point. It squeezes out any uncooked egg.

To serve, cut sandwiches into quarters, sprinkle with powdered sugar and serve.


The word is that this recipe was concocted be the California Kiwi Association to increase the sale of Kiwi. At first glance, you might think Kiwi and french toast would be disasterous bedfellows. Time and time again, I'm so completely amazed at the the number of things that go with maple syrup. Marketing ploy or not, this combination is a winner.
