Speedy Gonz-omelette
(2 servings)
- 3 large eggs

1 teaspoon butter
-
1 Tablespoon taco seasoning

2 Tablespoons finely diced green pepper

1 Tablespoon finely diced red onion
-
dash of cumin
-
dash salt and pepper
-
1/3 cup of salsa (your choice of hotness)

2 Tablespoon refried beans
-
shredded Cheddar cheese
-
sour cream and guacamole on the side (optional)
In a skillet over medium heat, saute the green pepper and onion until tender. Beat eggs, taco seasoning, cumin, salt and pepper; pour into the pan and cover securely with a lid.
Combine salsa and refried beans; heat in the microwave for 30-40 seconds, or until hot. Meanwhile, grate the cheddar and set aside.
When the omelette has set, flip over and cover half of the omelette with the salsa mixture, and top with the cheese. Fold over, cut into two wedges, and serve with additional salsa if desired, sour cream, and guacamole.
I think that the ingredients in this would make a fantastic breakfast burrito. Simple and versatile, this omelette can be tweaked to your liking.
