Savory Breakfast Platter
(4 servings)
- 4 slices bacon

1 Tablespoon butter

1/4 cup chopped green onion

8 large eggs

1/4 cup whipping cream
-
3/4 teaspoon seasoned salt

1/4 teaspoon dill weed

1/8 teaspoon pepper

1/4 cup shredded Cheddar cheese

4 medium bananas
Fry bacon in large skillet until crisp; drain on paper towel and crumble. Pour half the bacon grease into another large skillet. Divide butter between the two and melt. Saute green onion lightly in one of the skillets. Remove with slotted spoon and drain on paper towel.
Beat together eggs, cream, and seasonings. Scramble eggs gently in one skillet, adding cheese just before done.
Meanwhile, cut bananas in large chunks and saute them in the other skillet over medium-high heat until heated through, turning gently once. Eggs and bananas should be done at about the same time.
Arrange on the serving platter with eggs in middle and bananas circling them. Sprinkle dish with bacon and green onions and serve immediately.
Makes 4 servings.
This breakfast rules. It sounds complex, but after you've done it a couple times, it becomes routine. We have it on holidays. It's best to have two people in on this project, one with each skillet. Sure, we were skeptical about the sauteed banana part, but they're great.
