Mexican French Toast

(4 servings)

  • 8 flour tortillas
  • 2 large eggs
  • 1/4 cup milk
  • 2 Tablespoons unsalted butter
  • 1/2 teaspoon salt
  • thinly grated cheddar cheese - for topping
  • salsa - for topping
  • diced onions - for topping
  • diced avocado - for topping
  • chopped cilantro - for topping
Get 4 serving plates ready.

Combine eggs, milk and salt in a large shallow bowl. Submerge the tortillas one at a time in the mixture. Soak them well and turn once to coat evenly.

In a large skillet at medium high heat, add about 1 Tablespoon of the butter. Fry the tortillas one at a time until both sides are golden brown. Add more butter as needed.

As you finish each French Toast tortilla, place immediately on a serving plate (2 tortillas per plate), pat off excess butter with a paper towl and sprinkle with cheddar cheese as desired. (Don't hesitate to put tortillas in microwave if cheese doesn't melt as much as you'd like.)

Top each set of tortillas with salsa and whatever other Mexican-style toppings you like.
Serve and enjoy!


Mexican French Toast? Isn't that like American Swedish Meatballs or French Spanish Fries? When cultures clash, the result can be delicious! (And interestingly, French Toast was invented in the United States.) I'm so confused.
