Cranberry Fritters
(6 servings)
- 2 cups all-purpose flour

1 cup cranberries

3/4 cup sugar

1/2 cup water

1/4 cup ice water

1/4 cup sugar

1 apple - peeled and diced

2 large eggs - separated

1 teaspoon baking powder

1/4 teaspoon salt

powdered sugar for dusting

oil for frying
In a saucepan, combine cranberries, sugar and water. Cook over high heat - stirring often - until berries begin to burst. Remove from heat and cool in freezer. Allow to cool a refrigerator-cool temperature before using.
In a large bowl, sift together flour, sugar, baking powder and salt.
In a small bowl, combine egg yolk and ice water and beat well.
In a separate bowl, beat egg whites until stiff peaks form.
Combine contents of all bowls - including cranberry mixture - and mix well. Fold in apples.
In a deep skillet on high, heat about 1 inch of oil to about 350 degrees. Carefully, drop batter into the skillet in 2 or 3 Tablespoon dollops. Cook about 1 minute per side until golden brown.
Place finished fritters on a stack of paper towels to drain of excess oil.
Dust with powdered sugar and serve with your favorite topping... like maple syrup or your favorite jam or marmalade.
Great look, taste and texture. Cooking the cranberries with sugar makes the berries come alive and mellows their natural tartness.
