Coconut Rice with Mangos (Thailand)

(2 servings)

  • 2 medium mangos - diced into 1/2 inch pieces
  • 2 and 1/4 cups water
  • 1 cup short grain rice
  • 1/2 cup coconut milk
  • 2 Tablespoons honey
In a medium sauce pan, bring the water to a boil. Add rice and cook until nearly all of the water has been absorbed.

Reduce heat to low. Stir in coconut milk. Cover and continue to cook for 5 minutes - stirring often - until all water and milk is absorbed. Remove from heat and stir in the honey.

Transfer rice to two serving bowls. Top rice with mango pieces and serve.


In Thailand, the main breakfast staples are fruit and rice. This is a great marriage of the two. You might want to try replacing the mango with bananas or try a combination of fruits. A-roi! That's Thai for delicious.
