Banana Orange Oat Muffins

- 1 and 1/2 cups quick or old fashioned oats

1 cup all-purpose flour

3/4 cup buttermilk

1/3 cup brown sugar

1/3 cup raisins

2 medium ripe bananas - mashed

1 large egg - lightly beaten

2 Tablespoons vegetable oil

1 and 1/2 teaspoons grated orange peel

1 teaspoon baking powder
-
1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt
This recipe makes a dozen muffins.
Preheat oven to 400 degrees.
Prepare 12 muffin cups with muffin papers or a light coating of cooking spray.
In a large bowl, combine oats, flour, brown sugar, baking powder, baking soda, cinnamon, salt and raisins. Mix well.
In a separate medium bowl, combine milk, mashed bananas, egg, oil and orange peel. Mix well.
Add wet ingredients to dry ingredients and stir until just mixed and moistened.
Fill each muffin cup to slightly more than 3/4 full.
Bake 20 to 22 minutes or until golden brown.
Moist and delicious muffins loaded with flavor. You could replace the buttermilk with regular low fat milk. It's still good, but not quite as great. Same thing with replacing 1/4 of the flour with whole wheat flour.
