Microwave Oatmeal Granola Bars
(8 servings)
- 2 cups quick-cooking oats

2/3 cup semisweet chocolate chips

1/2 cup packed brown sugar

1/2 cup butter - melted

1/4 cup corn syrup
In a large bowl, combine the oats and brown sugar. Stir in the melted butter and corn syrup.
Press mixture into a lightly greased 9-inch square microwave-safe dish.
Microwave on high for 4 minutes. Rotate once midway through cooking if your microwave doesn't auto-rotate.
Sprinkle chocolate chips evenly over the bars. Microwave on low for 1 or 2 more minutes until chips are melting.
Remove dish from microwave and spread melting chocolate evenly over bars.
Refrigerate at least 30 minutes before cutting into bars.
