Cowboy Frittata

- 6 large eggs

1/2 cup milk

2 Tablespoon butter - melted and cooled

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 cup green onions - chopped

5 strips bacon - cooked and crumbled

1 cup (4 oz) shredded Cheddar cheese
Yee Ha Pardners! This was pretty dang good. I used regular onion instead of green onion and I added a Tablespoon of chopped cilantro, but those were the only changes I made. I'd suggest skipping the salt. I found that the bacon provided all the salt you need. While I really liked this dish, I could see how it would be easily improved by adding a bit more flavor... like a couple Tablespoons of chopped bell pepper or diced jalapenos (for spice lovers). Bottom Line: It was easy, satisfying and filling. The bacon flavor was great. Giddy Up! (This recipe was submitted in 2006. It was tested and photographed in January 2017.)
How To Make A Cowboy Frittata
In a bowl, beat eggs, milk, butter, salt and pepper. Pour into a greased 11 x 7 x 2-inch baking dish. Sprinkle with onions, bacon and cheese. Bake, uncovered at 350 degrees for 25 to 30 minutes or until a knife inserted near the center comes out clean.
Slice into 6 pieces and chow down!
