Spicy French Toast With Roasted Tomato

(2 servings)

  • 6 slices bread
  • 3 large eggs
  • 2 plum tomatoes
  • 2 teaspoons garlic powder
  • 1 or 2 drops red food coloring - optional
  • 1/2 teaspoon salt
  • 3 Tablespoons melted butter
  • 2 teaspoons red crushed pepper
  • 1 Tablespoon olive oil
Mix butter with the garlic powder, red food coloring and salt.

Beat eggs in medium bowl, dip each side of bread in the eggs, then cook over medium fire in a large skillet. When cooking the bread, drizzle a little of the butter mixture on each side. Continue this with each slice of bread.

While the bread is cooking. Slice plum tomatoes and place on a sheet of aluminum, drizzle tomato slices with olive oil and sprinkle with crushed pepper. Place in oven at 450 degrees, bake until the tomato looks shriveled.

Place slices of the tomato on the bread and serve.
