Fish Cakes Breakfast

(8 servings)

  • 1/2 pound salmon
  • 1 and 1/2 pounds mashed potato
  • chopped parsley
  • brown or white breadcrumbs or mixture of both
  • 1 beaten egg
Poach the salmon. Boil and mash the potatoes. Flake the salmon and fold it into the mashed potatoes. Mix in parsley and salt and pepper.

Form 1/2-inch thick round patties. Brush with beaten egg. Dip in the breadcrumbs and fry in a little oil until golden brown.

Serve with bacon and eggs.


My wife was a chef at a large private house. All the guests were served these with their bacon and eggs. When I heard I did not fancy this for breakfast. How wrong I was. It goes perfectly with bacon and eggs.
