Eggs Monterey
(4 servings)
- 2 6.5-ounce jars of artichoke pieces in water

4 large eggs

1/2 cup milk

4 green onions - minced

1/2 cup prepared pesto
-
8 ounce Monterey Jack cheese - grated

6 saltine crackers - crushed
-
sour cream - for topping
Pre-heat oven to 350 degrees.
Drain and chop artichokes. Set aside.
In a medium bowl beat eggs to lemon color. Add artichokes, milk, onions, pesto, cheese and crackers to the eggs. Mix ingredients together and pour in an 8x8-inch buttered pan. Bake 35 to 40 minutes.
Cut into squares and garnish with sour cream to serve.
A fairly easy to make morning casserole with Monterey Jack cheese, eggs, artichoke pieces and 4 other ingredients.
