Blenty of Blintzes Bake

- For The Batter:

1/2 cup softened butter

3 Tablespoon sugar

2 large eggs

3/4 cup milk

1 teaspoon baking powder

1 and 1/4 cup all-purpose flour

For The Filling:
-
1 16-oz container of small curd cottage cheese
-
2 Tablespoons softened butter
-
1 larger egg
-
1 Tablespoon sour cream
-
1/2 teaspoon salt
Mix together the batter ingredients until blended. Place half of the batter in a greased 9x9-inch baking pan.
Mix the filling ingredients until well-combined. Add all of the filling to baking dish on top of the batter. Cover this with the remaining 1/2 of the batter mixture.
Bake in a 350 degree F. oven for 50 minutes until golden brown.
Serve hot with sour cream, jam, and/or berries on the side.
This is a wonderful, easy dish which emulates the taste of Blintzes, without all the work. Great for breakfast, Brunch, or Blunch.
