Rice Krispie Energy Bars
(10 servings)
- 1/2 cup sesame seeds

1/2 cup sunflower seeds

2 and 1/2 cups chopped mixed dried fruit (I like pineapple and raisins)

1 cup quick or old-fashioned oats

7 cups Rice Krispies cereal

1 cup honey

1 cup sugar
-
2 cups crunchy peanut butter
-
1 cup powdered milk
-
2 teaspoons vanilla
-
1/2 teaspoon almond extract

3/4 cup mini chocolate chips
- In a large fry pan over medium-high heat. toast the sesame seeds and sunflower seeds until they smell nutty and delicious. Remove from heat. Set aside until cool.
- Prepare a a 13 x 9 baking pan with a very thin coating of cooking spray. Use a paper towel to absorb excess oil.
- In a blender or food processor, pulse the seeds and dried fruit until finely chopped.
- In a large bowl, combine the oats, Rice Krispies and the mixture from the blender.
- In a medium MICROWAVE-SAFE bowl,mix together the honey, sugar and peanut butter. Microwave on high until just hot and bubbly - stirring once after 20 seconds.
- Add powdered milk, vanilla and almond extract to microwave mixture and stir to combine.
- Pour wet ingredients over dry ingredients in the bowl. Mix the ingredients together.
- Fold in the chocolate chips.
- Press the mixture into the prepared pan. Cover and place in refrigerator to cool.
- When completely cool, cut into desired sized squares or bars.
A healthier, breakfast-on-the-go take on classic Rice Krispie Treats. Kids love it.
