Basic Breakfast Corn Bread
(6 servings)
- 1 cup yellow corn meal
- 1 all-purpose cup flour
- 3 teaspoons baking soda
- 2 Tablespoons canola oil
- 1 large egg
- 1 and 1/2 cups milk
- 1/4 cup sugar
Prepare a 9-inch round pie tin or equivalent with a very light coating of cooking spray.
Pre-heat oven to 425 F.
Mix dry ingredients together and set aside.
Mix wet ingredients together and set aside.
Whisk wet ingredients into dry ingredients until blended together. Pour mixture into pie tin and put into oven bake for about 22 minutes [don't open oven until at least 22 minutes have gone by].
Stick knife or tooth pick into center. If it comes out dry, it's done.
A simple, easy corn bread recipe. Great with honey! A fun replacement for toast to accompany bacon and eggs, etc.
