Hamburger Breakfast Sandwich
(4 servings)
- 1/2 pound ground beef or turkey

1/2 cup Cheddar cheese - shredded

4 large eggs

2 Tablespoons butter or margarine

8 slices of bread

1 avocado (optional)
-
1/2 medium onion - sliced (optional)

pannini press if available
Make 4 very thin hamburgers with the ground beef, Grill on a medium hot skillet until done (or use reheated hamburgers from a BBQ the day before.)
Drain any grease from the pan, add 1 Tablespoon of butter, and cook each of the eggs until they are done. Cook them 'over medium' or 'over hard' depending on preference.
Stack the egg and hamburger on the bread and top with cheese, avocado and onion if desired. For best results, butter the top sides of the bread and grill for 3 minutes in a pannini press.

I like to make this whenever we have hamburgs leftover from a BBQ. It's such a waste just to throw them away. Instead of shredded cheese, you could easily use cheese slices. Hamburg buns work just as well as sliced bread, unless you are making them into panninis, in which case bread is the better choice.
This is the best way to use up leftovers from a summer BBQ! And kids love it! So does my husband!
