Canadian Flapjacks
(4 servings)
- 2 cups all-purpose flour

2 large eggs

1 pinch sea salt

1/2 cup honey

1 and 1/2 cup apple juice or milk

2 teaspoons baking powder

2 Tablespoons oil

1 medium apple - grated
Combine all ingredients except apple with mixer. Add apple and mix by hand. Spoon into oiled fry pan, at medium heat. Turn when bubbles appear and harden. Brown other side. Serve immediately with your choice of topping. Honey is best. Maple syrup is second best.
Note: To make these Canadian Flapjacks truly Canadian, consider using an apple variety that's native to Canada like a McIntosh, Cortland, Ambrosia or Spartan apple.
These pancakes have grated apple and optional apple juice for a fast, fruity and fun breakfast.
