Egg Toast With Guava Cream

(2 servings)

  • 4 slices firm wheat bread (from a larger sized loaf)
  • 4 eggs
  • 1+ Tablespoons butter for each slice of bread
  • 8 thin slices of Colby Jack cheese
  • 4+ Tablespoons sour cream
  • 4+ teaspoons Guava Jelly
Cut a hole in the slices of bread large enough for the egg to be cooked in. You can use a glass, or a small cookie cutter, or a knife.

On medium heat, melt enough butter to coat the bottom of your pan. The bread will soak up the butter so be sure you have plenty in the pan.

Place a slice of bread in the pan and crack an egg into the hole in the bread. Cook for a few minutes or until the bottom of the egg is set and the bread is toasted on the bottom. Flip it over and cook for a minute or two, then top with 2 slices of cheese and continue cooking until yolk is just set, the cheese is melted, and bottom of bread is toasted.

Transfer the fried bread to a plate and repeat with remaining slices of bread. Toast the cutouts in the pan while you are frying the bread.

Mix the sour cream with most of the guava jelly. Spread remaining jelly on the toasted cutouts. Top egg toast with the sour cream mixture.

Variation:

Same as above except do not cut holes in the slices of bread, instead fry the bread and the eggs separately. Melt the cheese on the eggs while frying. Top the fried bread with the eggs and top all slices with sour cream mixture.


Interesting combination. For a savory taste, you could omit the jelly and add chopped tomato, fresh garlic and oregano.
