Cottage Cheese Pancakes II
(4 servings)
- 1/3 cup chopped onion

1/4 teaspoon salt

1/4 teaspoon black pepper

7 Tablespoons unsalted butter - melted

1 and 1/2 cups cottage cheese

3 large eggs - lightly beaten

6 Tablespoons all-purpose flour
This recipe makes about 1 dozen 5-inch pancakes.
In a small frying pan, saute the the onions over medium-high heat in two Tablespoons of butter until golden brown.
In a large bowl, combine the cottage cheese, eggs, flour, 1/4 cup of the butter and the salt and pepper. Add the sautéed onions and mix well.
Brush a large skillet with some of the remaining butter and heat to medium-high.
Dollop the batter in 1/3 cup portions for each pancake. Cook each side about 2 minutes or until golden brown.
Add more butter the skillet for each batch of pancakes you cook. To keep finished pancakes warm while making more, keep them on a platter in the oven at 200 degrees.
You might think onions don't belong in a breakfast pancake, but once you try these with a little butter and maple syrup you'll change our mind. Enjoy!
