Oatmeal Banana Bread

(8 servings)

  • 1/3 cup butter
  • 1 cup sugar
  • 1 large egg
  • 1 cup mashed banana
  • 1 cup all-purpose flour
  • 1/2 cup quick cooking oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup walnuts - chopped
  • 1/4 cup candied citrus peel (optional)
Preheat oven to 350 degrees.

Prepare a 10 x 5 loaf pan with a generous coating of cooking spray.

In a medium bowl, cream the butter and sugar together until you get the texture of wet sand. Add the egg and mix well. Add mashed banana and stir until just mixed.

In a separate large bowl, combine the flour, oats, baking powder and salt.

Add wet ingredients to dry ingredients and stir until just mixed. Fold in the nuts and candied citrus peel.

Pour mixture into prepared pan and cook for 45 minutes or until a knife or toothpick inserted into the center comes out clean (no batter).

Allow bread to cool at least 15 minutes before slicing and serving.

To make your own candied citrus peel

Boil citrus peels in water for 10 minutes and scrape away any pith that's sticking to the peel. Repeat this process as necessary to remove all pith.

Rinse the peel in cold water and slice into thin strips. For each cup of citrus peel, create a syrup of one cup sugar and one cup water. Place the peel in the syrup and cook at a low simmer until all of the syrup is absorbed. This can take a couple of hours.

When fully absorbed, let the strips cool and then coat them with sugar. Leave the strips to dry overnight.



The secret ingredient here is candied citrus peel. I've included my recipe to make that too.
