Cornmeal Bacon Waffles

- 8 slices of bacon - cooked crispy and crumbled

1 and 1/4 cup all-purpose flour

3/4 cup cornmeal

2 and 1/4 teaspoon baking powder

1/2 teaspoon baking soda

1 pinch salt

2 cups buttermilk
-
2 large eggs
-
3 Tablespoons real maple syrup
-
1/4 cup unsalted butter (1/2 stick) - melted
In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda and salt.
In a separate bowl, beat the eggs with the buttermilk and syrup.
Add wet ingredients to dry ingredients and stir until just combined. Stir in the butter and crumbled bacon. It's better to have a couple lumps in the the batter than to over-mix.
Cook according to the instructions for your waffle maker.
Serve immediately with a pat of butter and warm maple syrup.
This is so much better than you'll get from any waffle mix. It's hearty and has so much flavor even before you add toppings. Enjoy!
