Quick & Easy Breakfast Couscous

(4 servings)

  • 1/2 cup water
  • 1/4 cup apple juice
  • 1/4 cup fresh squeezed orange juice
  • 1/2 cup couscous
  • 1 teaspoon finely grated orange zest
  • 2 tablespoons finely chopped blanched almonds or walnuts
  • 1 tablespoon honey
  • 1 dash cinnamon
Combine all of the ingredients in a 1-quart microwaveable casserole dish. Cover. Microwave on high until the liquid is absorbed and the couscous is tender, 5 to 6 minutes. Let stand, covered, for 1 minute more.


If you don't have both apple juice and orange juice, you can substitute any juice combination or a 1/2 cup of just one fruit juice.
