Morel & Swiss Quiche
(6 servings)
- 1 9-inch pastry for single pie

1 1/2 cups Swiss cheese - grated

1 cup fresh morel mushrooms - sliced

1/2 cup onion - chopped

4 large egg - beaten

1 1/2 cups whole milk (or use evaporated milk)

3 Tablespoons flour

1/4 teaspoon salt

1/4 teaspoon dry mustard
Place the pastry into a 9" pie dish. Cover the bottom of the pie crust with the grated cheese. In a skillet, saute mushrooms in oil or butter and spread evenly over the cheese. Saute the onion in the same skillet and sprinkle over the mushrooms.
In a bowl, combine the eggs, milk, flour, salt and dry mustard, mix well. Pour into the pie shell. Sprinkle with paprika and bake at 375° for 40-45 minutes or until the center is solid when jiggled.
A rich, delicious quiche with the flavors of fresh morel mushrooms and Swiss cheese.
