Vanilla Puff Pancake

- 1 cup milk

4 large eggs

1/2 cup sugar

1 teaspoon vanilla extract

1 vanilla bean

1 cup all-purpose flour

1/4 cup butter - softened
Prepare a 10x10 baking dish by coating the bottom and sides with the softened butter.
Preheat oven to 400 degrees.
In a large bowl, beat the eggs and gradually mix in the milk, sugar and vanilla extract as you continue to beat.
Slit the vanilla bean with a knife and scrape the seeds inside into the mixture.
Add the flour and mix well.
Bake for 20-25 minutes until golden brown.
Serve right away with your favorite topping.
Puffy goodness, Great with maple syrup, warmed apple sauce or any other fruit topping.
