Orange Marmalade French Toast
(10 servings)
- 1 loaf of rustic bread (like French) - cut into 1/2-inch to 3/4-inch slices

butter - softened

1 12-ounce jar of orange marmalade

2 1/2 cups low-fat milk

1/3 cup sugar

1 teaspoon vanilla extract

1/4 teaspoon ground nutmeg

6 large eggs

1/3 cup finely chopped walnuts or pecans
- Prepare a 13x9 baking dish with a light coating of cooking spray.
- Spread a thin coating of butter on one side of of each bread slice and place half of the slices butter-side-down in the prepared pan. (It's okay if you have to squeeze them in or have some overlap.)
- Spoon marmalade evenly over all of the bread slices. Top the marmalade layer with the remaining bread slices - butter-side-up.
- In a medium bowl, beat the eggs with the milk, sugar, vanilla and nutmeg. Pour this mixture over ingredients in the baking dish.
- Cover and refrigerate overnight - at least 4 hours.
- Preheat oven to 350 degrees. Uncover the baking dish and sprinkle evenly with chopped nuts. Bake for 45 minute or until golden brown. Let stand 5 or ten minutes before serving.
- Divide into portions and serve with additional marmalade or maple syrup.
This is an overnight casserole that serves a good-sized group. You could probably squeeze a dozen servings out of it. The marmalade creates a sweet, tangy thin layer in the casserole that your guests will love.
