Banana Oatmeal Bake
(4 servings)
- 3 bananas (2 sliced and 1 mashed)

2 cups rolled oats

1 teaspoon baking powder

1/4 teaspoon kosher salt

1/4 cup brown sugar

1 egg - beaten

1 and 1/2 cups skim milk

1 teaspoon vanilla

2 Tablespoons brown sugar (optional for topping)
Line an 8-inch pan or glass baking dish (square or round) with parchment paper (for easy removal and cutting!)
Slice 2 bananas. Arrange them in the bottom of the pan. Combine the dry ingredients: oats, baking powder, salt and brown sugar. In a separate bowl, mash 1 banana and combine with the rest of the wet ingredients: egg, milk, vanilla.
Pour the wet ingredients into the dry. Mix well. Pour batter into pan. Bake in a 375 degree oven for about 25 minutes. Sprinkle with remaining brown sugar and bake for another 4 to 5 minutes. Let cool for 5 minutes before serving.
This is a baked oatmeal with a lot of sweet banana flavor. It takes about 5 minutes to prepare and about 30 minutes to cook.
