Wheat Germ Honey Pancakes

(4 servings)

  • 1 and 1/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1/4 cup honey-crunch wheat germ
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 and 1/2 cups milk (soy milk work fine)
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1/2 teaspoon vanilla
In a large bowl, mix together all of the dry ingredients: flours, wheat germ, baking powder, baking soda and salt.

In a separate medium bowl, beat the eggs then add the remaining wet ingredients: milk, melted butter, honey and vanilla. Stir until well combined.

Add the wet ingredients to the dry ingredients and mix until just combined.

Prepare a large skillet by placing on medium-high heat and coating generously with cooking spray.

For each pancake, dollop 1/3 cup of batter into the skillet. Cook until the surface is covered in bubbles and the edges appear dry. Flip and cook the other side to golden brown.


We made this a couple weekends in a row. I use soy milk and egg substitute to make it a little more healthy. Topped with warm maple syrup, it's great.
