Homemade Breakfast Sausage
(12 servings)
- 1 and 1/2 teaspoons brown sugar

1 teaspoon dried sage - crumbled

1 teaspoon salt
-
1/2 teaspoon black pepper

1/2 teaspoon sweet paprika
-
1/8 teaspoon crushed red pepper
-
1 pound of ground pork
-
1 teaspoon ice water
-
vegetable or canola oil for frying
This recipe makes about a dozen sausage patties.
In a small bowl, combine all of the seasonings and brown sugar (1st six ingredients).
On a large flat work space, sprinkle the seasoning mixture and ice water over the pork. Knead the meat until the seasonings are evenly distributed.
Form the meat into patties.
Fry in a small amount of oil over medium-high heat until the browned and the center of the patties are no longer pink.
You can also freeze patties for later use. Just thaw in the refrigerator overnight the night before you're ready to cook them.
Nothing is better than homemade. You can easily adjust the seasonings to suit your tastes. For instance, double the crushed red pepper to make spicy breakfast sausage.
