Broccoli Egg Quesadilla
(1 serving)
- 3/4 Cup chopped steamed broccoli

1/2 cup diced onions

1 Tablespoon canola oil

salt and pepper - to taste

1 whole egg
-
2 egg whites
-
1 teaspoon water
-
1/2 to 3/4 cup shredded Mozzarella

2 whole wheat tortillas
Saute onions in oil until tender, then add steamed broccoli and saute a minute longer.
In small bowl, whisk egg and egg whites with water, salt and pepper, then add to the broccoli and onion mixture and cook until eggs are firm.
On a preheated griddle or in a large sauce pan, place one of the tortillas and sprinkle half of the cheese on it, then add the broccoli and egg mixture and add the rest of the cheese. place the other tortilla on top and cook each side until golden.
Enjoy with fat free sour cream if desired! (:
A healthy (mostly) egg white breakfast quesadilla with broccoli and Mozzarella between whole wheat tortillas.
