Spicy Homemade Hash Browns

- 3 large Yukon Gold or Russet potatoes - peeled and grated

1 teaspoon salt

1 large egg - beaten

1 teaspoon cinnamon

1/2 teaspoon chili powder

1/2 teaspoon cumin

1 pinch of cayenne pepper

1 pinch sugar

vegetable or canola oil for frying
Place grated potatoes in a large colander. Sprinkle with salt and toss. Set aside 15 to 20 minutes. Press down on the potatoes with the back of a large spoon. Drain as much liquid from the potatoes as possible.
Place potatoes in a large mixing bowl. Add the beaten egg, sugar and spices and mix well.
In a large frying pan, create a layer of oil about a quarter inch deep. Set temperature to medium-high.
Using your hands, form the potatoes into 6 or 8 patties. Place the patties carefully in the hot oil.
Fry until browned and crispy - about 4 minutes per side. Set cooked patties on stacked paper towels to drain off excess oil.
Enjoy with your favorite breakfast.
This recipe plays it fairly safe in terms of spiciness. It can be easily modified to fit your tastes. Try adding a couple pinches of red pepper flakes for more fire.
