Spam Omelette

1 slice cheese - American or sharp Cheddar

your favorite salsa (optional)
I was raised on Spam and macaroni & cheese. My tastes have become more sophisticated over time, but I'm still a little bit trashy at my core. Alright... "trashy" is unfair. Spam gets a bad rap. It's basically a convenient canned ham with a little added pork shoulder. It's ham with a distinct personality... and it works great in an omelette. This dish took me about 6 minutes to prepare and it tasted great. Whether you love Spam or want an easy dish to get to know it, this is an omelette for you. (Recipe submitted in 2009. It was tested and photographed in November 2013.)
How To Make A Spam Omelette
Beat eggs for two minutes with fork. Brown spam in frying pan (medium-high heat) for two minutes per side. Temporarily, transfer spam slices to a plate.
Add teaspoon of butter to frying pan. Once butter melts, add eggs.
Let the eggs brown lightly on the bottom and then flip. Add spam and cheese to one side of the eggs. Fold the other half over and flip again so the cheese melts.

For a garish, try adding a teaspoon or two of salsa to the top.
