Cherry Pinot Noir Waffle Syrup

- 2/3 cup cherries - pitted

2/3 cup pinot noir

2/3 cup sugar

3 Tablespoons apple cider vinegar

1 star anise
Combine all ingredients and simmer until reduced to a light syrup (approximately 4-5 minutes.) Remove the star anise and puree in a blender until smooth.
Best served over a savory waffle, with duck confit or roasted chicken.
An elegant cherry syrup that's probably best suited for adding a sweet touch to savory evening waffles.
