Strawberry Pancake Sauce
(4 servings)
- 16 ounces strawberries - fresh or frozen (unsweetened and thawed)

1 teaspoon lemon juice

2 Tablespoons maple syrup
Puree the strawberries into a chunky puree.
In a small saucepan over low heat, warm the strawberry puree - stirring often. Stir in lemon juice and maple syrup.
Turn off heat and allow mixture to set for 2 minutes.
Dollop over your favorite pancake recipe.
This is a nice all-purpose strawberry sauce. It's also great over waffles... and here's a trick... I LOVE it swirled into oatmeal (with just a dab of whipped cream on top).
