Fig Bran Muffins

  • 1 cup chopped dried figs
  • 3 whole dried figs - thinly sliced
  • 1 and 1/2 cups bran cereal (like Fiber One or All-Bran)
  • 1 cup low-fat milk
  • 1 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup applesauce
  • 1/2 cup honey
  • 1/3 cup canola oil
  • 2 Tablespoons molasses
  • 1 large egg - beaten
Preheat oven to 400 degrees. Cut the whole figs into fairly thin slices - 4 slices per fig. Coat a 12 cup muffin tin with cooking spray or line the cups with muffin papers.

In a large bowl, combine the cereal and milk. Let this sit 5 minutes until the cereal is softened. Meanwhile, sift together the whole-wheat flour, all-purpose flour, baking powder and salt in a separate bowl.

Add the applesauce, honey, oil, molasses and beaten egg to the cereal and milk. Stir until combined. Add the flour mixture and stir until just combined. Fold in the chopped figs.

Spoon the batter into the prepared muffin tin and top each muffin with a single fig slice.

Bake for about 20 minutes or until a toothpick inserted in center of a muffins comes out clean.

Allow muffins to cool at least 15 minutes before serving.


A healthy low-fat muffin with bran cereal and figs as the main ingredients.
