Breakfast Bun Bar
(4 servings)
- 4 hot dog buns

4 large eggs

1/2 teaspoon hot sauce (optional)

salt - to taste

1 medium green green pepper - chopped

1 medium red bell pepper - chopped

1 small onion - chopped
-
1 jalapeno pepper - seeded and chopped (optional)

1 medium tomato - chopped

3 Tablespoons butter or oil

8 breakfast link sausages

1 cup shredded Cheddar cheese

1 medium ripe avocado - sliced
In a medium bowl, beat the eggs and salt (with the hot sauce if desired).
In a frying pan over medium heat, fry sausage links until browned on all sides and no longer pink in the middle.
In a separate pan, saute the peppers and onion together in about 2 Tablespoons oil or butter over medium heat. Stirring occasionally, cook until the onions are translucent and the pepper are tender. Turn heat to low to keep the sauteed vegetables warm.
In a third frying pan over medium heat, melt 1 Tablespoon of butter. Add the egg mixture. As the egg starts to set, begin stirring with a spatula to scramble the eggs. Continue until the eggs are almost completely set. Turn heat to low.
Place the shredded cheese, avocado and chopped tomato and separate small bowls.
To serve, place two breakfast links in each hot dog bun and top with equal portions of scrambled eggs. Then let your guests choose any or all of the other toppings to complete their breakfast bun.
A fun idea for breakfast of brunch. The ingredients listed here are just a few of the many options you could use. Also try adding bacon and mushrooms to the mix.
