Puffball Doughnuts

  • 3 large eggs
  • 1 cup sugar
  • 2 cups milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 Tablespoons melted shortening
  • vegetable oil for frying
This recipe make about 4 dozen Puffball Doughnuts.

In a medium mixing bowl, beat the eggs. Add the sugar and milk and stir well to combine.

Into a separate larger bowl, sift together the flour, baking powder and salt.

Add the egg and sugar mixture to the dry ingredients. Mix well. Add the melted shortening and stir to combine.

Pour vegetable oil into a deep, heavy-bottomed pot or fryer until it reaches a depth of about 4 inches. Heat the oil to 375 degrees.

Drop batter by large spoonfuls into the hot oil. Cook each doughnut for about two minutes - turning once - until lightly browned.

Remove doughnuts from the oil with a slotted spoon and drain on absorbent paper.

Suggestions:

- While the doughnuts are still warm, toss them one-by-one in a paper bag containing 3 Tablespoons sugar and 2 teaspoons cinnamon. this gives the donuts a nice coating.

- For more flavorful doughnuts, add 1/4 teaspoon nutmeg to the dry ingredients or 1 teaspoon vanilla to the wet ingredients... or do both.


This recipe taught me that it's easy to make doughnuts at home and I usually have all of the ingredients on hand. Simple. Basic. Delicious.
