Breakfast Salsa

(20 servings)

  • 1/3 cup apricot jam
  • 3 tablespoons water
  • 1 teaspoon ground cinnamon
  • 2 pints (about 4 cups) strawberries - hulled and diced
In medium bowl, whisk together the jam, water and cinnamon. Stir in the diced strawberries and toss gently to combine.

Refrigerate overnight and serve over pancakes, waffles or French toast, or stir into plain yogurt.


This apricot and strawberry mixture can act as a topping for pancakes and waffles. It can also be stirred into oatmeal or yogurt. You can even spread it on toast.
