Apple Date Muffins

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 1/2 cup date syrup
- 1/2 cup milk
- 1/3 cup oil
- 1 large egg
- 2 apples - diced
- 1/2 cup nuts or dates - chopped
These were good, but I thought they might be better with some minor adjustments. They had a whole wheat feel despite having no whole wheat flour in the recipe. Next time, I'd consider replacing the oil with melted butter and I'd grate one of the apples to add a little more moisture to each bite. If you're looking for a recipe that uses date syrup, go ahead and try this one. They were very good warm with butter. How To Make Apple Date Muffins
Combine dry ingredients, down to date syrup, in large bowl. Add wet ingredients together, then add to dry mixture. Add in apples, nuts and/or chopped dates. Spoon into muffin tin and bake in 375 oven for 20 minutes.
Makes 12 muffins.
Cooking Notes From Mr Breakfast
For me, this batter made 11 muffins. My cooking time was 19 minutes. I opted to use chopped pecans when it specified chopped nuts or dates.
Apples, dates, nuts (if you want them) and a healthy pinch of cinnamon and allspice combine to make muffins with an almost holiday-like flavor.
