Fruit Salad Breakfast With Vanilla Honey Yogurt

- 2 cups plain yogurt

1/2 teaspoon vanilla

2 Tablespoons honey

seeds of 1/2 of a vanilla bean

1 oranges - cut into segments

1 banana - cut into coins
-
10 strawberries - de-stemmed and halved
-
fresh raspberries - to taste
-
blueberries - to taste

1/2 cup green seedless grapes - halved
In a large bowl, mix together the yogurt, vanilla, honey and vanilla bean seeds.
In a separate large bowl, combine all of the fruits. (If not serving immediately, squeeze the juice from one of the orange segments over the banana slices to prevent them from browning.)
Place servings of fruit in serving bowls or parfait glasses and top each serving with vanilla honey yogurt. If using parfait glasses, try alternating layers of fruit and topping for a nice presentation.

The honey vanilla yogurt topping is also a wonderful topping for granola in the morning. Granola is also a great addition to the recipe if you'd like a little crunch with your fruit. Try experimenting with other fresh fruits too!
