Tim's Chorizo Breakfast Skillet
(4 servings)
- 1/4 cup Chorizo sausage chopped (about 2 inches of rolled sausage)

1 large tomato - diced

1 small yellow onion - diced

4 large eggs

2 and 1/2 cups frozen home-style potatoes

1 cup black beans drained and rinsed

3 Tablespoons vegetable oil

1 teaspoon garlic powder

1 Tablespoon parsley flakes

1 teaspoon salt

1/4 teaspoon pepper

2 shakes hot sauce (more or less to taste)

1/4 cup shredded mozzarella cheese

1/4 cup shredded cheddar cheese
Heat oil on medium heat until hot, add chorizo and let simmer until sausage begins to melt a little. Add frozen potatoes carefully and turn up heat to medium high, stir well.
When potatoes begin to soften add onions, salt, pepper, garlic powder, cheeses and parsley flakes, cook for 5 mins then add black beans, (at this point if you want to scramble the eggs in just add them and stir well until eggs just begin to set then add the chopped tomatoes) tomatoes (if frying eggs later)and hot sauce. Stir well and let cook an additional 3 mins and serve with tortillas or toast.
If making fried eggs, fry in separate pan and serve 1 egg on top of potato mixture per person.
This is so much better with fried eggs on top but having the eggs scrambled in is awesome too!
