Honey Cornbread Muffins

- 3/4 cup yellow cornmeal

1 and 1/4 cup all-purpose flour

1 Tablespoon baking powder

5 Tablespoons sugar

1 teaspoon salt

1 cup whole milk

2 large eggs

1/2 stick (1/4 cup) butter - melted

1/4 cup honey
Preheat oven to 400 degrees. Prepare a 12-cup muffin tin by lining all cups with muffin paper liners.
In a large bowl, mix together the cornmeal, flour, baking powder, sugar, and salt. In a separate medium bowl, whisk together the milk, eggs, melted butter and honey.
Add the wet to the dry ingredients and stir until just mixed and moistened.
Evenly divide the mixture evenly among the prepared muffin cups. Bake for 15 minutes or until until golden brown.
Serve muffins warm with a generous smear of butter.

A wonderful side dish for a Southern-style breakfast or great on their own with a smear of softened butter.
