Homemade Applesauce (Pancake Topping)

- 4 medium apples*

2/3 cup water

2 Tablespoons sugar

1 Tablespoon honey

1/2 teaspoon cinnamon
Peel and core the apples. Chop each apple into 1/2-inch to 1-inch chunks.
Combine all ingredients in a saucepan over medium heat. Cover and cook - stirring occasionally - until apple pieces are soft and break apart with very little pressure - about 20 minutes.
Mash with a fork or potato masher to achieve desired applesauce texture. (You may decide to mash less to achieve a "chunky applesauce".)
*Note About Apples: Some of the best apples to use for applesauce are Granny Smith, Fuji, Golden Delicious and Gala. For a more interesting flavor, use a combination of different apples. It's a good idea to taste the apple after you've chopped them. If they're super sweet, reduce the sugar by a Tablespoon. If they're exceeding tart, add an additional Tablespoon of sugar or honey.
You may never buy applesauce in the store again. Easy recipe with very few ingredients. It's great on its own, but especially good on pancakes, French toast or waffles.
